Spearmint are grown for their leaves which are used to flavour vinegar, curry and jelly (often served with roast lamb and other meats), and to enhance thirst-quenching cooling beverages (mojico or mint tea). Spearmint, or Mentha spicata is a pleasant-smelling species of mint found in health-food products, toothpastes, mouthwashes, and cosmetics. It is often used in medicine for its claimed therapeutic properties. Spearmint contains vitamins, antioxidants, and vital nutrients. Its aroma is very similar to that of peppermint. It contains less menthol than peppermint, but it is rich in limonene, dihydrocarvone, and cineol. It has a sweeter taste than peppermint. Like other herbs of the mint family, spearmint has a square-shaped stem. Its leaves are around 5 centimeters to 9 centimeters long and 1.5 centimeters to 3 centimeters wide. The tips of the leaves are pointed, like spears, hence its name. Spearmint and rosemary extracts have recently been found to improve memory. Mints should be planted where they will not encroach on other plants, as they spread so readily. It is ideal for container. Mint revels in deep, rich, moist ground and requires little care except manicuring or fertilizing in the spring. However, as the stems grow rapidly and the leaves become thin and small as the season advances, it is advisable to cut down from a third to a half of the patch when 6 or 8 inches high, drying the leaves and putting them in tight jars for winter use. Peppermint (Mentha piperita), is often found growing wild in wet, shaded spots but it will also thrive in your own garden or window box. It is a perennial plant. Peppermint will grow almost anywhere that's out of the hot sun, but it prefers a moderately rich soil and at least partial shade. Because it spreads vigorously by underground runners, you might want to cultivate yours in containers (at least four inches in depth) or — in the garden — in beds surrounded by boards buried about six to eight inches in the earth (they'll help keep the mint from taking over your growing plot). When planted as a companion to cabbage — or strewn between any vegetables of the genus Brassica — peppermint helps deter the white cabbage butterfly. Make sure the herb receives at least an inch of water a week, and to promote bushier growth, snip off the tender budding tips. If you want to assure a lengthy harvest, you should also keep the flowers pinched back but don't pick any leaves before the herb is 10 to 12 inches high, or you'll weaken the plant. To dry peppermint, gather the foliage in the early morning before the dew has evaporated. The leaves will be at their best just prior to flowering when the level of essential oils is at its peak. Hang the bunches upside down in warm shade, or dry them in the oven at 150 degrees Fahrenheit then strip the leaves from the stems and store them in opaque jars with airtight lids. Clean, undried sprigs can also be frozen in plastic bags, or to prepare a decorative, flavorful addition to punch and iced tea just add leaves to the water when you refill an ice cube tray. This durable cultivar is known for its longevity in the garden and having unusually coloured flowers that are larger than other Penstemon hybrids. It is an evergreen perennial or sub-shrub to 4 feet tall with dark stems heavily clothed with narrow lanceolata dark green leaves. Tolerates and even thrives in poor soils and alkaline conditions but requires relatively good drainage.The flowers attract butterflies into the garden. Pinch plants after the first bloom to promote a quick re-bloom. For plantings to look best, they should be replanted every 3-5 years. Hardy to below 15° F and even much lower if soil is not moist.
