Unlike many other greens, such as mustard and spinach, amaranth loves the heat and needs to be grown in sun. It needs at least 6 hours of sunshine daily. Younger leaves have a milder flavour and are good to use in salads. Mature leaves have a flavour similar to spinach. Use amaranth as a substitute for spinach in recipes.
