I have a lovely tb and a smart 14.3 cob that needs starting. help with backing youngster/ other riding help

Hello, I need help to get my percheron x (medium weight) backed and riding on. She turned 5 beginning Sept, has had very little done with her, and was pretty much unhandled before I bought her a few months ago. I'll health has hindered me somewhat and am not going to be able to back her myself, as i have just had a hysterectomy and wont be able to ride until after Christmas. I also have a moorland cob X mare, who is an absolute star, who needs a rider. She's easy and fun, enjoys hacking about, safe in traffic; but unfit and now has no rider. I rebacked her in the spring, and other than a little jig when she falls into canter doesn't put a foot wrong. She's a very lovely girl, pictured above with my nine yr old son, who is a total novice, and he handles her, puts her rugs on, and plods up our lane.
